Berry Jicama Salad
Organic strawberries, Organic blueberries, and crispy jicama come together for a super simple, patriotic, and BBQ-ready Red, White and Blue Berry Jicama Salad!
Equipment
- 1 Large Bowl
Ingredients
- 2 cups Jicama chopped or stamped using a star cookie cutter
- 2 cups Organic Strawberries
- 1 1/2 cups Organic Blueberries
- 1-4 tbsp Extra-virgin olive oil to taste
- 3 tbsp Fresh Lime Juice
- 1 tbsp Apple Cider Vinegar
- 1/2 tsp Cayenne pepper
- 1/2 tsp Salt REAL Mineral Salt*
- 1/4 tsp Freshly ground black pepper
- 1/3 cup Fresh herbs use your favorite; basil, cilantro, or mint works well
Instructions
- In a bowl, toss together the jicama, strawberries, and blueberries.
- Add a drizzle of olive oil, lime juice, vinegar, cayenne pepper, salt, and pepper and toss to combine.
- Let it rest for about 10 minutes to allow the flavors to come together.
- Toss in the fresh herbs and serve.
