White Bean Salad

Ingredients
  

  • 6 cup White Navy Beans (cooked, rinced)
  • 4 Organic Tomatoes (medium, diced)
  • 1 cup Red Onion (finely chopped)
  • 1 cup Parsley (finely chopped)
  • ½ cup Extra Virgin Olive Oil
  • ½ cup Balsamic Vinegar
  • Sea Salt & Black Pepper (to taste)

Instructions
 

  • Combine the beans, tomato, bell pepper, red onion, and parsley in a mixing bowl. Add the oil and balsamic vinegar and season with salt and pepper to taste. Mix well.
  • Divide between bowls and season with additional balsamic vinegar or salt and pepper if needed. Enjoy!
